Butter Bean Burgers/Veggie Burger

Ingredients
  • INGREDIENTS

  • 1 (15 ounce) can butter beans, drained

  • 1 small onion, chopped, sauted till clear

  • 1 tablespoon finely chopped jalapeno pepper or sweet bell pepper

  • seasoned bread crumbs, (enough to bind)

  • 1 egg, beaten

  • 1/2 cup shredded Cheddar cheese

  • 1/4 teaspoon garlic powder or fresh garlic to taste

  • salt and pepper to taste

  • 1/4 cup olive oil

Directions

  2. 1.In a medium bowl, mash butter beans. Mix in onion, jalapeno pepper, seasoned bread crumbs, egg, cheese, garlic powder, salt, and pepper. Divide into 4 equal parts, and shape into patties. Refrigerate for approx. 15-20 minutes to hold together better.

  3. 2.Heat oil in a large skillet over medium-high heat; use more or less oil to reach 1/4 inch in depth. Fry patties until golden, about 6-8 minutes on each side.

  4. Serve on bun or bread, or as a a side dish. Top w/ favorite toppings. Good w/ bbq sauce, or burger toppings

This recipe looks great!
Do you add the cheese just for flavor or also for binding purposes? I am allergic to mailk and am wondering if I could make the burgers without the cheese.

Great Recipe! This is going to be a really good one to try! I think I will use the jalapeno pepper and maybe a little salsa for topping. YUM!!

This is an easy recipe to adapt to what's on hand. You can sub the butter beans w/ black beans or chick peas. Use your favorite shredded cheese, substitute fresh garlic for powdered, hot peppers or sweet peppers, leeks for onions…you get the point. Also, you can dredge the patties in a little seasoned coating mix, panko or bread crumbs, or cornmeal before frying for a little crunchy outer coating to go with the buttery creamy inside textures.
