Fruited Pasta Salad

Ingredients
  • 1-1/2 cups uncooked spiral pasta

  • 1 can (8ounces) unsweetened pineapple chunks

  • 1 carton (8 ounces) nonfat peach yogurt

  • 2 tablespoond nonfat sour cream

  • 1-1/2 cups cubed cantaloupe

  • 1/2 cup halved seedless grapes

  • 1-1/2 cups sliced fresh strawberries

Directions
  1. Cook pasta according to package directions; rinse in cold water and drain. Cool completely. Drain pineapple, reserving 2 tablespoons of juice, set pieapple aside. In a small bowl, combine the yogurt, sour cream and reserved pineapple juice until smooth; cover and refridgerate. In a large bowl combine the past,pineapple, cantaloupe and grapes. Just before serving stir in the strawberries and drizle with the yogurt mixture.

I agree, this sounds really good and something different. Great to try while all the fresh fruits are in season.

This is something I never thought to do: putting pasta with fruit. I'm looking forward to trying it especially since it calls for the spiral pasta. This kind is special with all kinds of dishes. I think I will use watermelon instead of the cantaloupe. Great idea for a yummy salad!
