Peanut Butter Cereal Bars

Why pay more for store-bought bars when you can make tastier ones at home?

Peanut Butter Cereal Bars
  • 3 cups mini marshmallows

  • 3 tablespoons margarine

  • 1/2 cup reduced fat peanut butter

  • 3 1/2 cups crisp rice cereal

  • 1 cup uncooked quick oats

  • 1/3 cup mini semisweet chocolate chips

  1. Lightly coat 13X9 inch baking pan with nonstick cooking spray.

  2. Combine marshmallows and margarine microwave on HIGH 15 seconds, stir, continue to microwave 1 minutes, stir until marshmallows are melted and mixture is smooth. Add peanut butter, stir, add cereal and oats stir until well coated. Spread into pan, immediately sprinkle chocolate chips on top, press lightly.

  3. Cool completely, cut into pieces.

  4. ENJOY!!

Serving size in grams?
Marshmallows, margarine, and rice cereal are bad choices for diabetics.
And then there is the "semisweet" chocolate that could be loaded with sugar.

While these bars are really delicious, the nutrition counts are drastically off. My calculations put them at 250 calories and 34 grams carbs per bar, if cut into ten pieces, as the recipe states, not 65 calories and 10 grams carbs that the recipe states.

Why not use Kashi cereal and smart balance peanut butter to make it healther? Also if you add some protein powder which has no taste the carbs will go from Simple to Complex and you will not get the up or down spike.
