No Peek Chicken Casserole

Ingredients
  • Crockpot

  • 2 pounds boneless skinless chicken breasts — cut in 1" pieces

  • 1 envelope dry onion soup mix

  • 1 can fat-free beef broth

  • 1 can 98% fat-free cream of mushroom soup

  • 4 ounces mushrooms — drained

Directions
  1. Combine all ingredients in crockpot. Stir together well. Cover and cook on low 8 to 12 hours or on high 3 to 4 hours. Serve over noodles or rice. Recipe may be doubled.

Sounds good all until you see it has a whopping 1182 mg of sodium per serving! YIKES! Maybe with a couple of cups of water to wash the salt down???

I wonder how this would work with Pork instead of chicken.. my hubby will NOT touch chicken lol.

Awesome crockpot recipe! I wonder how this would taste on some of that mock cauliflower rice? I think I will try it that way. Sounds yummy!
