1 pound boneless skinless chicken breast
8 ounces cherry tomatoes
1/2 cup low sodium chicken broth
1/4 cup balsamic vinegar
1 tablespoon basil, fresh — chopped
Preheat oven to 425 degrees.
Coat a large baking dish with nonstick cooking spray. Place chicken pieces and tomatoes in baking dish. Pour chicken broth and balsamic vinegar over chicken. Sprinkle basil over the top.
Bake for 20-25 minutes, until juices run clear and the internal temperature reaches 165 degrees.
