Breakfast Bird Nests

  • 12 turkey bacon strips

  • 1 1/2 c. eggs substitute

  • 6 Tbsp. shredded reduced fat Mexican cheese blend (I used the cheddar)

  • 1 Tbsp. minced fresh parsley (optional)

  1. In a large skillet, cook bacon over medium heat for 2 min. on each side or until partially set but not crisp. Coat 6 muffins cups with cooking spray; wrapt 2 bacon strips around the inside of each cup. Fill each with 1/4 cup egg substitute; top with cheese.

  2. Bake at 350 for 18-20 minutes or until set. Cool for 5 minutes before removing from pan. Sprinkle with parsley.

I love breakfast the best too so I am always on the lookout for easy, take-and-eat breakfasts on the go.

Breakfast has always been my favorite meal. Often, I have breakfast for dinner. This is so quick and easy that I am sure to cook it for meals other than breakfast as well.
