12 turkey bacon strips
1 1/2 c. eggs substitute
6 Tbsp. shredded reduced fat Mexican cheese blend (I used the cheddar)
1 Tbsp. minced fresh parsley (optional)
In a large skillet, cook bacon over medium heat for 2 min. on each side or until partially set but not crisp. Coat 6 muffins cups with cooking spray; wrapt 2 bacon strips around the inside of each cup. Fill each with 1/4 cup egg substitute; top with cheese.
Bake at 350 for 18-20 minutes or until set. Cool for 5 minutes before removing from pan. Sprinkle with parsley.
