1 small cauliflower, broken into florets
2 tablespoons extra virgin olive oil
3/4 cup dried breadcrumbs
2 oz. Parmesan cheese, grated
freshly ground black pepper
2 tablespoons chopped parsley
1 whole clove garlic (optional)
Boil or steam cauliflower until just tender, drain well and place in a lightly oiled shallow baking dish.
Heat oil in a saucepan over a medium heat, add breadcrumbs and garlic and cook, stirring, 4-5 minutes or until golden. Remove pan from heat, add Parmeasan cheese and black pepper to taste and mix to combine. Remove garlic. Sprinkle breadcrumb mixture over cauliflower and cook under a preheated hot grill for 3-5 minutes or until top is golden. Sprinkle with parsley and serve.
