Cauliflower Parmesan

  • 1 small cauliflower, broken into florets

  • 2 tablespoons extra virgin olive oil

  • 3/4 cup dried breadcrumbs

  • 2 oz. Parmesan cheese, grated

  • freshly ground black pepper

  • 2 tablespoons chopped parsley

  • 1 whole clove garlic (optional)

  1. Boil or steam cauliflower until just tender, drain well and place in a lightly oiled shallow baking dish.

  2. Heat oil in a saucepan over a medium heat, add breadcrumbs and garlic and cook, stirring, 4-5 minutes or until golden. Remove pan from heat, add Parmeasan cheese and black pepper to taste and mix to combine. Remove garlic. Sprinkle breadcrumb mixture over cauliflower and cook under a preheated hot grill for 3-5 minutes or until top is golden. Sprinkle with parsley and serve.

Another good sounding cauliflower dish. Thanks for sharing.
In my family the kids don't eat "collie-flower"…but they do love "beagleweed". They hate peas, but they love "Hulk muscles". No broccoli, but they LOVE "trees"…go figure!!
