•1 can chickpeas, rinsed drained, with liquid saved and set aside
•2 tablespoons olive oil
•1 tablespoon minced garlic
•2 teaspoons lemon juice
•1/4 teaspoon salt (optional)
•2 teaspoons parsley, finely chopped
•1 cup of shelled, roasted hazlenuts
Take roasted hazlenuts and place in blender or food processor. Add about a teaspoon of the chickpea liquid from the can and blend to a smooth consistency.
Add olive oil, garlic, lemon juice, salt, and parsley and blend to a smooth hummus consistency. If it is too thick, you can add 1 teaspoon of chickpea liquid or water at a time until you reach the desired consistency.
Serve warm with pita bread, crackers, or vegetables.
