Egyptian - Seafood Chowder

  • Ingredients:

  • 2 medium potatoes, cubed

  • 1 carrot, sliced 1/4 inch thick

  • 1 medium onion, chopped

  • 1 cup clam juice

  • 1 cup water

  • 2 tablespoons reduced-fat margarine

  • 1 pound fresh lean fish (halibut, tuna, haddock, orange roughly, etc), cut into 1-inch pieces

  • 1 (6 1/2 ounce) can clams, untrained

  • 1 (12 ounce) can evaporated skim milk

  • 2 tablespoons chopped fresh chives

  • 1 teaspoon paprika

  • Salt and pepper to taste

  2. Heat potatoes, carrots, onion, clam juice, water, margarine, salt and pepper to boiling in a large saucepan. Reduce heat, cover and simmer 15 to 20 minutes or until potatoes are almost tender. Stir in fish and clams, cover and heat to boiling. Reduce heat and simmer about 5 minutes or until fish flakes easily with a fork. Stir in milk, chives and paprika and heat through.

You might try using almond milk or coconut milk as a base instead of cow's milk. They are also milk like products but they do not contain the lactose that upsets stomachs and digestion.

Sounds yummy to me too. My tummy doesn't like the milk but sometimes when I know I'm not going anywhere, I indulge in a creamed soup. LOL

NEVER bring clams to a boil!! Add them after you remove from the heat and let them heat through. Otherwise you will have yucky, chewy, nasty clams.

I would like to try this recipe but I can only find TRAINED clams. does anyone have any extra "untrained" clams? (look at the ingredient list)

The rule of thumb for figuring calories is:

9 calories for every 1 gr. of fat
4 calories for every 1 gr. protein
4 calories for every 1 gr. carbs
7 calories for every 1 gr. alcohol

my calculation based on this info is 224 calories per serving

Sorry, I am diabetic and perhaps my problem is unique…easy to digest carbs such as POTATOES give me diarrhea.
So at least in my book this is NOT a diabetic friendly recipe.

This recipe sounds good. Many of us are watching our weight so it would be good to have the calories for a serving.
