Guacamole Veggie Wrap

  • Ingredients:

  • * 6 spinach flavored tortilla wrap or flour tortilla

  • * 1-1/4 cups purchased guacamole

  • * 1 cup salsa

  • * 1-1/2 cups roma tomatoes\raw, chopped

  • * 1/2 cup lettuce, shredded

  • * 1 cup shredded Monterey Jack cheese

  • * 1/2 cup jicama, peeled and cut into thin strips

  • * 3/4 cup alfalfa sprouts

  • * 1/4 cup fresh cilantro, chopped

  • * 1 jalapeno pepper, seeded and chopped

  • * 2 scallion, chopped

  • * 1/4 cup black olives, chopped

  • * 1-1/2 cups Picante sauce

  1. Arrange tortillas on a work surface. Spread guacamole over one side of tortilla. Cover with remaining ingredients, except picante sauce. Fold tortillas, enclosing mixture to make a packet. Serve with picante sauce.

  2. if one wishes they can make their own guacamole. Also, if one can't take the heat of jalapeno peppers, substitute a banana pepper, bell pepper the color of your choice.

I have always liked those spinach flavored tortilla wraps. They are really good to make snacks or other kinds of wraps also. This wrap has way too may carbs for me as is, but I think I can get those carbs down by substituting a few items. This sure does sound yummy.
