Greek Spinach Casserole

Cottage cheese, feta, and eggs make this casserole the perfect light dish for any meal.

2 C. (16 oz.) small curd cottage cheese

1 (10 oz) frozen chopped spinach, thaweed and squeezed dry

8 oz crumbled low fat feta cheese

6 Tbsp all purpose flour

1/2 tsp black pepper
-
1/4 tsp salt
-
4 eggs lightly beaten
In a large mixing bowl combine the spinach and both cheeses.
Add: flour, pepper and salt.
Mix well.
Stir in eggs till blended.
Pour into greased 9 inch baking dish.
Bake uncovered at 350 for 1 hour or until knife comes out clean.

I think the picture DOES GO with this recipe, because it shows you how you can use a pie shell of sorts to also make this recipe as it resembles a quiche. This recipe is actually a quiche recipe so instead of simply using a baking dish you can also make your own crust or even use a store bought pie shell..??? Does that make sense..???
The 6 TBSP of flour isn't suppose to make a crust it is to hold the ingredients together. this was an awesome dish. I did tweek it a bit as I use a cottage cheese by fiber one. My husband love the dish and wants me to make it a lot more. I served it with a boneless skinless chicken breast that was cooked in coconut oil. The one thing I can say is next time I will add some flour to the casserole dish before adding the mix so it won't stick to the dish.

6Tbl of flour mixed with all of the other ingrediants at one time would not produce a crusted 'pie' as shown in the recipe photo?
Yes. I grew up eating a dish very much like this one. It is so delicious. Thanks for reminding me of another option for dinner (or breakfast too I suppose :-)

I made this last night and it was really good and really easy! I used low fat cottage cheese and it turned out very good. I did not try it with the fat free cottage cheese which would reduce the numbers further, but I imagine it could work. Enjoy.
