Chicken Cacciatore over Pasta

Serve this flavorful chicken over your favorite whole-wheat pasta. The chicken turns out perfect every time and only takes 30 minutes to make.

Chicken Cacciatore over Pasta
Ingredients
  • 1 pound skinless, boneless chicken breast halves

  • 1/2 cup chopped onion

  • 1/2 cup chopped green bell pepper

  • 1 (16 ounce) can chopped tomatoes, drained

  • 1 (8 ounce) can tomato sauce

  • 1 1/2 teaspoons Italian seasoning

  • 1/3 cup sliced ripe olives

  • 1/8 teaspoon black pepper

  • 3 cups hot cooked noodles (or any favorite pasta, I would use wheat—Leigh) , rinsed and drained

Directions
  1. Slice chicken breasts into 32 pieces.

  2. Spray a large skillet with olive oil flavored cooking spray. Saute chicken, onion, and green pepper for 6 to 8 minutes. Stir in drained tomatoes and tomato sauce.

  3. Add Italian seasoning, olives, and black pepper. Mix well to combine. Lower heat and simmer for 10-15 minutes, stirring occasionally.

  4. For each serving, place 1/2 cup pasta on a plate and spoon 2/3 cup sauce over top.

  6. Serving Size: 1/2 cup noodles, 3/4 cup chicken cacciatore

Have been eating this dish since I was a child and though this recipe calls for ripe olives every dish I have had has been with green olives. I love all olives so I don't have a preference. Someone asked for a substitute for olives and all I would suggest would be capers, but cannot imagine anyone not liking olives.

Not much of a chicken person, but made the rest of the sauce, it was wonderfully fresh, great tasting and just perfect on the noodles, thank you.

I will give this a try.But without the olives. I do not eat them,I do not like olives only olive oil. Lol

This is very similar to a recipe I use. The big difference is I do not use any olives…guess I never thought of using them. thank you for sharing!

I LOVE CHICKEN AND I THINK THAT THIS IS A GOOD RECIPE. THE ONLY THING I WOULD CHANGE IS INSTED OF SPLENDA I WOULD USE EQUAL. THANKS FOR THE RECIPE.
