1 small cauliflower broken into florets
2 tablespoons extra virgin olive oil
3/4 cups of dried breadcrumbs
2 ounces parmesan cheese, grated
freshly ground black pepper 2 tablespoons chopped parsley 1 whole clove garlic( optional)
Boil or steam cauliflower until just tender. Drain well and place in a lightly oiled shallow baking dish.
Heat oil in a saucepan over medium heat. Add breadcrumbs and garlic (if used) and cook, stirring for 4-5 minutes or until golden. Remove pan from heat, add parmesan cheese. and black pepper to taste and mix to combine. Remove garlic.
Sprinkle breadcrumb mixture over cauliflower and cook under a preheated hot grill for 3-5 minutes or until top is golden brown. Sprinkle with parsley and serve.
