Raspberry Cream Gelatin

Ingredients
  • 1 package (10 ounces) frozen sweetened raspberries, thawed

  • 1 package (3 ounces) raspberry gelatin

  • 1 cup boiling water

  • 1 tablespoon lemon juice

  • 1 can (5 ounces) fat-free evaporated milk, chilled

Directions
  1. Drain reapberries, reserving syrup: set berries aside. In a mixing bowl, dissolve gelatin in boiling water. Stir in the lemon juice and reserved raspberry syrup. Refridgerate until partially set. Add milk. Beat on high speed until thickened, about 4 minutes. Fold in reserved raspberries. Pour into a 2 quart bowl. Refridgerate until set.

it sounds like it would be yummy. I wonder if I could use strawberry instead of rasberries? I'm not crazy about rasberries. I wonder if strawberries might have too much sugar, even though I would use sugar free jello.

Does anyone have any ideas on this?

I tried this using my canned raspberries instead of frozen and it turned out realy yummy!

Raspberries are one of my favorite fruits. I can't think of a better way to enjoy them than trying this recipe. It is even quick and easy to make and I love that.

Sound absolutely devine. I assume you used sugar-free gelatin. I will have to try it because it sound very cooling on a hot summer day. Thanks for sharing.
