BACON AND CABBAGE HOT POT

Ingredients
  • 6 slices bacon — fat trimmed

  • 1/2 sm red cabbage — shredded

  • 1 onion

  • peeled and finely chopped

  • 3 tbsp vinegar — malt

  • 1 tbsp currant jelly — red currant

  • 1 tbsp sesame seeds

  • nutmeg

  • freshly ground black pepper

Directions
  1. Roll up each bacon rasher and place in a microwave casserole dish. In a large bowl, combine the cabbage, onion, vinegar, red-currant jelly, sesame seeds, freshly ground black pepper and nutmeg Place this on top of the bacon rolls. Cover and cook on 100% until cabbage is tender, about 15 to 20 minutes.
