• 3 Rock Cornish Game Hens (1-1 1/2 pounds each)
• 1 large lemon cut into 6 wedges
• ¼ C. whole cloves, soaked for 10 minutes in apple cider vinegar, drained
• Small bunch of fresh parsley
• Homemade Fruit Sauce
Homemade Fruit Sauce:
1 C. sugar free cranberry juice
¼ C. sugar free black cherry preserves
2 T. ground nutmeg
Preheat oven to 325 degrees
Place one lemon wedge and 2 ½ T cloves in each hen.
Arrange hens on 9 1/2 X 11 Pyrex ® glass baking dish
Bake covered with aluminum foil cover for 45 minutes.
Remove foil, and allow hens to brown slightly for remaining 15 minutes.
Remove hens from oven, and garnish with remaining lemon wedges and fresh parsley.
Serve with side of Homemade Fruit Sauce for dipping
Preparation: Homemade Fruit Sauce
In a saucepan, combine ingredients and heat to boiling. Reduce heat and simmer for about 5 minutes, until slightly thickened.
