Mike’s Pasta with Sausage and Peppers

  • 2 - 3 tablespoons olive oil

  • 1 pound mild or hot Italian sausage / venison sausage (mild or hot)

  • 1 medium onion, chopped (or) diced

  • 4 red or green bell peppers, cut into thin slices

  • 1¾ teaspoons salt

  • 3 cloves garlic, minced (or) 1½ teaspoons garlic powder

  • 1½ teaspoons dried oregano

  • 1 cup canned crushed tomatoes

  • ½ teaspoon of hot crushed red peppers

  • ¾ - 1 cup chicken boullion or chicken broth

  • 2 cups sliced fresh mushrooms (optional)

  • 2 tablespoons red or white wine

  • ¾ - 1 pound pasta of your choice (Penne / Rigatoni works great)

  • 2 tablespoons grated Parmesan cheese (optional)

  • Parmesan cheese on table (if desired)

Directions

  2. In a large frying pan, heat the oil over moderate heat. Add the sausage and cook,

  3. turning, until browned and cooked through, about 8 minutes. Remove. When the

  4. sausage is cool enough to handle, cut it into 1/2-inch slices.

  5. Add the onion, peppers, and 3/4 teaspoon of the salt to the pan. Cook, stirring

  6. frequently, until the vegetables begin to brown, about 5-6 minutes. Cover and

  7. cook, stirring occasionally until the vegetables are soft, about 3-4 minutes longer.

  8. Add the garlic and cook, stirring, for about 30 seconds. Add the tomatoes, broth,

  9. wine, the reserved sausage and any accumulated juices, the parsley, and the

  10. remaining 1 teaspoon salt and bring to a simmer.

  11. In a large pot of boiling, salted water, cook the spaghetti until just done, about

  12. minutes. Drain and toss with the sausage-and-pepper mixture and the

  13. Parmesan (optional). Serve with additional Parmesan (if desired).

  14. Yield: 4-6 servings

This is a very tasty sounding recipe. For me it has way too many carbs. I think I can cut those carbs in half by using the low carb Dreamfield Pasta or spagetti squash.
