MEXICAN GREEN BEAN SALAD

Ingredients
  • 1 lb green beans, fresh

  • 1/2 cup olive oil

  • 2 jalapenos, seeded & chopped

  • 1 tbsp vinegar

  • 2 tbsp lemon juice

  • 1 tbsp onion, minced

  • 1 tbsp parsley, minced

  • 1 tbsp fresh cilantro, minced

Directions
  1. Steam green beans until tender-crisp, about 15 minute Drain.

  2. Whisk together other ingredients and pour over warm green bean

  3. Allow to marinate at least 1/2 hour.

  4. Serve at room temperature or chilled.

This recipe states it is 1 serving. For 1 lb. green beans??? What about the calories: 276 and 27 g fat? The info on this site needs to be accurate since it is for diabetics!
