Turkey Meatballs with Spinach, Bacon & Cream Sauce

Ingredients
  • 1 pound ground turkey

  • 1 bag 3.5 oz crushed bbq pork rinds

  • 1 egg

  • 1/2 teaspoon rosemary

  • 1/2 teaspoon oregano

  • 1/4 teaspoon cayenne

  • 1/4 teaspoon garlic salt

  • 2 cups spinach

  • 2 slices bacon — cooked and crumbled

  • 1 cup heavy cream

  • 2 tablespoons parmesan cheese

Directions
  1. Mix turkey, pork rinds, eggs, rosemary, oregano, cayenne and garlic salt. Cook meatballs. In separate pan, wilt spinach in 1/4 cup of water. Drain and add bacon. Add cream and parmesan and reduce. When reduced pour over meatballs.

I made the meatballs last night but altered the sauce to a light white sauce instead of the heavy cream. The meatballs were very good, using the pork rinds was a bit of genius. No bread crumbs to worry about, easy to crush, and added a nice texture. The sauce turned out okay but I had to use frozen spinach so it probably could have been better. All in all a thumbs up inspite of my alterations.
