Stir-Fried Green Beans

  • Stir-Fry Sauce

  • 1 1/2 tablespoons minced garlic

  • 1 1/2 tablespoons minced fresh ginger

  • 2 scallions (white and green parts) minced

  • 2 tablespoons dry sherry

  • 2 tablespoons SPLENDA┬« Granular

  • 2 tablespoons soy sauce

  • 1 tablespoon water

  • 2 tablespoons peanut or vegetable oil

  • Stir-Fry

  • 1 1/2 pounds green beans, trimmed, and rinsed

  • 2 tablespoons water

  1. Combine the Stir-Fry Sauce ingredients in a small bowl. Set aside.

  2. In a large skillet or wok, heat the oil and stir-fry the green beans until they are barely crisp-tender, approximately 2 minutes.

  3. Add the water and continue stir-frying for another two minutes, until the beans are crisp-tender and water has evaporated.

  4. Add the sauce and continue stir-frying for five or six more minutes, until the beans are tender but not over cooked. Serve immediately.

I think green beans are one of my most favorite vegs. I have used them several different ways, but this is a different change for me. I love snapping & preparing them.
