Broccoli Cheese Soup

Broccoli Cheese Soup
Ingredients
  • 4 cups chicken broth

  • 1 cup water

  • 1 cup half & half - fat free

  • 4 ounces cheddar cheese

  • 1/2 cup all-purpose flour

  • 1 tablespoon onion

  • 1/4 tsp. ground black pepper

  • 4 cups broccoli florets - bite-size

Directions
  1. Combine chicken broth, water, half & half, cheese, flour, onion and pepper in a large saucepan. Whisk to break up any lumps of flour; turn heat to medium/high. Bring soup to a boil; reduce heat to low.

  2. Add broccoli and simmer for 15-20 minutes until broccoli is tender, but not soft.

  3. For each serving spoon one cup of soup into a bowl and garnish with a Tbsp. of shredded cheese and a pinch of parsley

The soup was good! Left-over soup was too think and needed to be thinned out. Will make again, and will use onion powder again.

Got a recipe for potato soup that used chiken broth and at the end used cream cheese, no milk or cream…was great. Might want to try that

fat-free half-and-half is an oxymoron! 1 tb onion for 6 cups of liquid? at least use 1/2 onion. there is 2% cheddar now, which cuts the fat a little. definitely use the low-sodioum broth, as there is so much in the cheese. after 15-20 mins, small pieces of broccoli will be way overdone- try 5 mins. and how about a little chopped parsely, or chives, even thyme- something herbal?In conclusion, this recipe was not well thought out, in my opinion of course.

Looks good. Will use onion powder instead of real onions, which I can't eat…husband will love this!
