Spinach Stuffed Tomatoes Recipe

Spinach Stuffed Tomatoes Recipe
  • 3 tsp seasoned breadcrumbs

  • 1/2 cups grated Parmesan cheese, plus extra

  • 1/4 cups onion\cooked, chopped

  • 4.0medium tomato\cooked

  • 1/3 Lbs. fresh spinach\cooked

  • 1/4 cups bulgur

  • 1/2 cups water

  • 1/8 tsp nutmeg

  1. Prepare broiler. Bring water to boil in a saucepan over high heat. Add dry bulgur, cover pan, and reduce heat to low. Simmer about 20 minutes, or until tender.

  2. Clean spinach, drain, pat dry and coarsely chop. Cut off top of each tomato and scoop out pulp to make hollow shells. Chop pulp and drain in colander.

  3. Combine onion, drained tomato pulp and spinach in a saucepan. Cook until spinach is wilted, stirring constantly.

  4. Stir in next 3 ingredients and cooked bulgur. Fill each tomato with spinach mixture. Sprinkle with Parmesan cheese.

  5. (Dish can be prepared to this point; cover and refrigerated for 1 day before baking.) Turn on broiler. Arrange stuffed tomatoes on baking pan sprayed with nonstick cooking spray. Broil 5 inches from heat source 5-6 minutes until browned.

for a more healthy option substitute the cheese with Nutritional yeast you are adding a great deal of healthy yeast and vitamin b's and loosing that extra fat and cholesterol from the cheese- The Nutritional yeast is a delicious cheese flavor substitute-
this can be found at your Natural health food store / Whole foods

This is a great recipe for Stuffed Tomatos. The Parmesan cheese will give it a great flavor combined with the spinich. It will make a great main dish to serve to guests.

I substituted Quinoa (keenwah is hoe it's pronounced). This makes the recipe much higher in fiber, protein and lower in carbs.
