Awesome Cheesy Egg Casserole

You only need three ingredients to make this filling and delicious cheesy egg casserole.

Awesome Cheesy Egg Casserole
  • 9 Eggs

  • 2 lbs. Colby/Jack mixed shredded cheese

  • Jalapeno Peppers (sliced)

  1. Preheat oven 350. Spray 9x13 casserole dish .

  2. Beat eggs well. Add 1/2 of cheese and mix well. Add 1/4 to 1/2 C. of Jalapenos(if you want hot you can add more to taste).

  3. Put remaining cheese on top of egg mixture. Bake 30-40 minutes until eggs are firm.

  4. Cool 5 minutes. Slice into squares.

  5. Can serve as is or with pacanti or favorite salsa. Makes 6-8 servings depending on size of slices. SERVE WARM!!

I make different versions of this recipe a lot. I don't use 2 lbs of cheese however because it throws the balance of fats/carbs/proteins out the window. Use plenty of whatever leftover, or fresh, non-starchy carbs such as broccoli, cauliflower, tomatoes, mushrooms, onions, etc., into the mix. Use cheese, which contains a lot of fat, but only a 1/4 to 1/2 lb to balance the fats. Experiment with lean meats such as turkey. I will say some good flavor-able sausage goes a long way here as well.

I have added chopped fresh spinach to the mix and pushed a few slices of tomato after pouring the egg mix into the casserole dish.

this really looks good and the jalapenos are the main thing that keep my BG numbers low,I am going to make this Sat. morn. thanks
