Orange Chicken Tabbouleh

  • 1 C Boiling Water

  • 1 C Bulgur Wheat

  • 2 Oranges

  • 1 1/2 C Chicken

  • 2 t Cinnamon(optional)

  • 2 C Finely Chopped Fresh Parsley

  • 2 C Peeled, Seeded and Diced Cucumber

  • 2 T Green Onion

  • 1 T Finely Chopped Fresh Mint

  • 1 T Olive Oil

  • 1 Head Romaine Lettuce Heart. Quartered and thinly silced

  • Salt to taste

  • Dressing:

  • 1/2 C Key Lime juice OR Orange juice

  • 2 T Lowfat Plain Yogurt

  • Splenda to taste

  1. Pour boiling water into a medium bowl, add Bulgur Wheat. Stir, cover and let stand for approx 30 min.

  2. Cut up chicken into bite size pieces. In medium skillet brushed with olive oil, saute your chicken until golden. While cooking add cinnamon.

  3. Zest your oranges for garnish if you like. Peel and separate oranges silces and set aside to chill.

  4. In a large mixing bowl, combine all your ingredients except orange slices. Mix well and refrigerate 2-4 hours, stirring occasionally.

  5. Just before serving, fold in oranges and add dressing (or you can serve the dressing on the side)

  6. This has everything you need for a well rounded meal. Great for parties too.

  7. If you want to add fiber to this, replace the cucumbers with diced zucchini. That will give you about 3g fiber per serving
