Cool Cucumber Salad

You can add some tangy variety to your cucumbers with this refreshing salad.

Cool Cucumber Salad
  • 1 English cucumber, scored lengthwise with a fork and thinly sliced

  • 1/2 sweet onion, thinly sliced

  • 1 teaspoon olive oil

  • 2 tablespoons cider vinegar

  • 2 teaspoons sugar substitute

  • 1 teaspoon sea salt

  • 1/2 teaspoon freshly ground black pepper

  1. Combine the cucumber and onion slices in a medium bowl. Combine the remaining ingredients in a small bowl. Add the dressing to the cucumbers and onions and toss well. Cover and refridgerate up to 2 hours before serving.

Reading this recipe, I know that is going to taste fabulous. My Mom used to make it all the time and everyone at her table enjoyed it. Her cuke might not have been an English one, but they were cukes. You might notice that this time I did not say I would like it. That is because I cannot eat cucumbers. They give me awful indigestion. lol
