Broccoli Crunch

Ingredients
  • 1 (10 3/4 oz) can of 98% fat-free cheesy broccoli soup

  • 1/4 cup fat-free mayonnaise

  • 4 (10 0z) packages frozen chopped broccoli, thawed

  • 20 reduced-fat Ritz crackers

  • Butter-flavored nonfat cooking spray

Directions
  1. Preheat oven to 350 degrees F. Mix the soup and mayonnaise in a bowl. Add the broccoli and toss lightly to coat. Pour the mixture into a casserole dish. Crush the crackers and sprinkle on top of casserole. Spray with 10-15 pumps of butter-flavored spray to moisten the crackers slightly. Bake for 20minutes, or until heated through.

It seems as if almost everyone loves a good Broccoli recipe and this one is sure to please. It is low carb, low in calories, and is quick and easy to fix.
