SUMMER TUNA CAKES

Ingredients
  • 2 cups shredded zucchini

  • 2 cans tuna in water — 6oz drain

  • 2 eggs — slightly beaten

  • 1 tbsp grated onion — finely chopped

  • 1 tsp lemon juice

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 2 tbsp vegetable oil

  • 3 lettuce leaves

  • 1 tomato — cut in six slices

  • 3 tbsp mayonnaise

Directions
  1. Drain zucchini in a paper towel-lined colander until dry. In medium bowl, combine zucchini, tuna, eggs, onion, lemon juice, salt and pepper. Mix well. Shape into six patties, about one inch thick. Heat vegetable oil in large skillet over medium heat. Add tuna patties and cook until browned on both sides, about 10 minutes. To serve, place two patties on a lettuce leaf, top each with a slice of tomato and a dollop of mayonnaise.

I love tuna patties I just have never had them with veggies will have to try this and will share it with my friends at work.
