Zippy Collard Greens

Ingredients
  • 1 lb cut and cleaned collard greens

  • 4 cups water

  • 2 jalapenos, seeded & chopped

  • 2 teaspoons minced garlic

  • 2 tablespoons olive oil

  • 2 teaspoons salt

  • cider vinegar, optional

Directions
  1. In a large saucepan combine the olive oil, jalapeno & garlic. Let cook, over medium heat, for about 5 minutes. In the meantime, wash and drain the collards. Add collards and salt to the saucepan. Add water, place lid on pan and bring to a boil. Once boiling, turn down the heat to a simmer and cook till the liquid is almost gone…about 45 minutes. To serve, dress with vinegar if desired.

Make sure that you wear rubber gloves when working with the jalapenos. The jalapenos will burn your hands.
