HOOSIER EGG CASSEROLE

Ingredients
  • 1 tsp butter

  • 4 hard-boiled eggs — coarsely chopped

  • 1 cup chopped celery

  • 1/4 cup chopped walnuts — coarsely chopped

  • 1 green onion — diced

  • 1 tbsp green pepper — diced

  • 1/4 tsp salt

  • pepper — to taste

  • 1/2 cup mayonnaise

  • 1/2 cup grated cheddar cheese — sharp

Directions
  1. Butter a 1 qt. 2ltre casserole. Combine eggs, celery, walnuts, onion, green pepper, salt and pepper and mayonnaise in a bowl. Toss lightly together with two forks. Pour into buttered casserole. Sprinkle with

This sounds wonderful but I would have to carmelize the onions and leave out the peppers. Will try this today.
