By Avera

Colorful crisp-tender veggies and a super-easy sauce make these chops outperform the competition.

Perfectly High-Performance Pork Chops
Ingredients
  • 4 pork chops (5 ounces each) , ½ inch thick

  • 1 medium sized white onion, chopped

  • 1 large green bell pepper, chopped

  • 1 large red bell pepper, chopped

  • 1 small (6 ounce) can V-8®

  • ½ t. canola oil

Directions
  1. Spread canola oil on bottom of heavy skillet and heat over medium heat

  2. Place pork chops in skillet and brown the chops on both sides, (or about 15 minutes on each side)

  3. Remove chops and keep warm

  4. Add the chopped onion and pepper, and sauté until crisp-tender, stirring constantly

  5. Add the V-8 to the vegetable mixture, and bring to a boil

  6. Return the chops to the pan. Reduce heat and simmer for an additional 12 to 15 minutes until the chops are tender

  7. Remove chops to a serving dish.

  8. Spoon vegetable sauce over each chop

  9. Serve immediately

I tried them last night for dinner, the whole family liked them. My son suggested to try them next time with pineapples and some maraschino cherries. That sounds good also. THANKS!
