Cottage Cheese Gelatin Mold

Ingredients
  • 1 package(.3oz) sugar-free gelatin flavor of your choice

  • 1 1/2 cups boiling water

  • 1 3/4 cups fat-free cottage cheese

  • 1 1/22 cups reduced-fat whipped topping

Directions
  1. In a bowl, dissolve gelatin in boiling water. In a blender or food processor, process the cottage cheese until smooth. Stir in gelatin. Refridgerate until partially set. Fold in whipped topping. Pour into a 3-cup mold coated with nonstick cooking spray. refridgerate until set.

Have they come up with low sodium cottage cheese yet? Lowfat cottage cheese would have less carbs than fat free because anything fat free ends up with more sugar in it. Thank you I have tried this before and liked it.

I'm new to diabetes stuff. What does the exchange mean on the bottom of the recipe mean.

I like adding jello or fruit to my cottage cheese anyway, so why not just do it from the start! Good idea. I trust it is a misprint for the amount of whipped topping and it should be 1/2 cup not 1/22 cup?
