TOMATO-EGG CUPS

Ingredients
  • 4 lg tomatoes

  • 125 g cream cheese — 1/4lb

  • 1/2 med onion — chopped

  • 1 med green pepper — chopped

  • 1/2 cucumber — chopped

  • 2 tbsp chopped parsley

  • 1 tbsp chopped chives

  • 4 hard-boiled eggs

  • - Sour Cream Dressing- 1 cup

  • 1 cup sour cream

  • 1/2 cup mayonnaise

  • 2 tsp lemon juice

  • 1 tbsp horseradish sauce

  • 1 pinch cayenne

  • salt, paprika to taste

  • 1/4 tsp dry mustard

Directions
  1. Cut slices from top of tomatoes and scoop out centres. Sprinkle with salt. Turn upside down and chill. Reserve pulp.

  2. Soften cream cheese with a little milk. Put in bottom of tomato cups.

  3. Combine tomato pulp, onion, pepper, cucumber, parsley, chives, coarsely chopped eggs and 1/2 cup dressing.

  4. Fill cups with mixture.

  5. Spoon remaining dressing over top of each tomato cup.
