Honey-Pineapple Sweet Potatoes

  • 3 pounds sweet potatoes, peeled and cut into 3/4' cubes

  • 1 cup water

  • 1 can (8 ounces) crushed pineapple

  • 1 can (8 ounces) pineapple chunks, drained

  • 1/4 cup honey

  • 1/2 cup coarsely chopped pecans, optional

  1. Place sweet potatoes and water in a 2-qt. microwave-safe dish. Cover and microwave on high for 8-10 inutes or until potatoes are tender; drain.

  2. Drain crushed pineapple, reserving juice. In a large bowl, combine the crushed pineapple, pineapple chunks, and sweet potatoes. Transfer to a 2-1/2qt. baking dish coated with cooking spray. In a small bowl, combine honey and reserved juice; pour over sweet potatoes.

  3. bake, uncovered, at 350 degrees for 10 minutes. Stir; sprinkle with pecans if desired. Bake 15-20 minutes longer or until heated through.

  4. Yeilds: 13 servings

Ha Ha Diane, We made some today and they are scrumptious. They are so sweet they almost taste like they should be off limits to a diabetic. I thought we'd better make our own because you seemed like you might just take me at the arm wrestling.

Ken this is a side dish with our Easter meal. The other have theirs with the marshmellows and cherries and all the other goooey stuff. This is very tasty and has such a good flavor…Debe
