Spinach Pasta Salad

Low in carbs, calories and cholesterol, this satisfying salad recipe is easy to make and makes enough to share or save for later.

Ingredients
  • 1 cup uncooked bow tie pasta

  • 1 package (10 ounces) fresh baby spinach

  • 1 medium sweet yellow pepper, diced

  • 1/2 cup chopped dried apricots

  • 1/2 cup balsamic vinaigrette

Directions
  1. Cook pasta according to package directions. Meanwhile, in a large serving bowl, combine spinach, yellow pepper and apricots.

  2. Drain pasta and rinse in cold water; add to spinach mixture. Drizzle with vinaigrette and toss to coat.

  3. Serves: 8-10

This recipe sounds so good. Pasta is something I am always going to eat so I don't mind eating smaller portions. Just think how pretty this recipe is going to look when served.
