CABBAGE AND HAM SOUP

Ingredients
  • 3 tbsps butter

  • 2 tbsps finely chopped celery

  • 1/4 c finely chopped onion

  • 1 tbsp chopped parsley

  • 1 tbsp all-purpose flour

  • 1 can chicken broth — (400g - 14 oz.)

  • 1/2 lb cooked ham — 250g diced

  • 1/2 tsp crumbled bay leaf

  • 1 cup finely shredded cabbage

  • Sour cream

Directions
  1. Melt 2 tablespoons of the butter in a 2 litre - 2-quart pan over medium heat

  2. Add celery, onion, and parsley and cook until limp.

  3. Stir in flour. Add broth and cook,stirring, until bubbly.

  4. Add ham, bay leaf, cabbage, and remaining 1 tablespoon butter

  5. Cook until ham is heated through and cabbage is limp.

  6. Spoon sour cream into individual portions.
