BACON AND CABBAGE SALAD

Ingredients
  • 4 oz bacon — 250g

  • 1 c cabbage — chopped

  • 1 tbsp pickle relish — half-sour

  • 1/2 c sauerkraut

  • 2 scallions — chop white part only

  • salt and pepper to taste

Directions
  1. This sturdy salad is a Russian Version of coleslaw. You can add leftover meat or chicken to it to create a satisfying luncheon salad.

  2. Sauté the bacon in a heavy skillet over medium-high heat for about 5 minutes, until crispy and brown. Remove the bacon from the skillet, reserving 1 tablespoon of bacon grease, and crumble. Combine the cabbage, pickle, sauerkraut, scallions, crumbled bacon, salt, pepper, and reserved bacon grease in a bowl and toss well. Serve immediately.
