Impossible Beef and Mushroom Pie

Ingredients
  • 1 lb. ground beef

  • 5 ounces mushrooms, sliced

  • 1/2 cup onion, chopped

  • 1 clove garlic, crushed

  • 1-1/4 cups milk

  • 1/2 cup sour cream

  • 3 eggs

  • 3/4 cup buttermilk baking mix

Directions
  1. Preheat oven to 400°F. Heat a heavy nonstick skillet over medium high heat. Sauté ground beef, mushrooms, onion and garlic 4-5 minutes, stirring frequently until beef is browned. Drain. Spread in a greased 10 inch pie plate. Beat remaining ingredients and salt and pepper to taste in a bowl until smooth. Pour into plate. Bake 30-35 minutes, or until knife inserted in center comes out clean. Cool 10 minutes.

I made this recipe but with some modifications. First, I cut it to serve 4 instead of 8 as this was a main dish and I need the higher protein (doctor orders). I also utilized Chobani Greek 0% fat yogurt (6 oz) instead of the sour cream. Here are my stats:
