Stir-fried Ginger-Garlic Greens

  • 2 tablespoons canola oil

  • 3 garlic cloves thinly sliced

  • 1 tablespoon chopped fresh ginger

  • 3 large scallions sliced 1/2 cup

  • 1 (12-0unce) bag iceberg lettuce mix with radishes and carrots

  • 1 (16-ounce) bag baby spinach

  • 1 tablespoon soy sauce

  • 1/2 teaspoon dark sesame oil

  1. Heat canola oil in a heavy saucepan over medium-high heat. Add garlic and ginger; cook until fragrant but not browned, about 30 seconds. Add scallions. lettuce mix. and spinach in batches. tossing with tongs, Stir-fry until wilted. 2-3 minutes longer, Add soy sauce and sesame oil, toss, and serve.

I can imagine eating this as a side dish right now. It is not expensive and sounds very easy to prepare. It is great to have a recipe with so few carbs that we can eat lots of it.
