1 lb ground Italian sausage Can use turkey sausage as well I use mild Italian sausage
1½ tsp crushed red peppers
1 large diced white onion
slices Turkey bacon pieces
2 tsp garlic in a garlic press
5 cans of low fat and low sodum Chicken stock
1 cup fat free half and half
6 lb sliced 1/8 in thick red potatoes with skins large potatoes
¼ of a bunch of kale
Really easy to make and oh so Yum!
Sauté Italian sausage and crushed red pepper in a large pot. Drain excess fat, refrigerate while you prepare other ingredients.
In the same pan, sauté turkey bacon, onions and garlic for approxiamtly 15 mins. or until the onions are soft.I dont care for Onions so I chop or puree them up and it cooks faster too.
Add the cans of Chicken broth to the onions, bacon and garlic. Cook until boiling.
Add potatoes and cook until soft, about half an hour.
Add half and half and cook until thoroughly heated.
Stir in the sausage.
Add kale just before serving. Delicious!
Love this soup on a cold day and my daughter and I do the soup and salid like olive garden minus the bread sticks =)
