Zucchini Chips

  • 1 ounce flour

  • salt and pepper

  • plastic bag

  • 3/4 lb. zucchini, cut into thin slices

  • oil

  1. Mix flour with salt and pepper and put in a plastic bag. Add the zucchini slices and shake to coat well. Heat the oil in a deep pan until hot (about 375°F). Fry the zucchini, in batches if necessary, for 5 minutes. Drain on kitchen paper and then serve while still hot.

I tried this with small and large Italian squash, and Mexican squash. All were great and better than potato chips, add a little cayenne pepper if you like a little heat!
