Tuscan-Style Tuna Salad

  • 2-6oz cans of chunk-light tuna drained.

  • 1 15 0z can small white beans' rinsed

  • 10 cherry tomatoes ,quartered

  • 4 scallions trimed and sliced

  • 2 table spoons extra-virgin olive oil

  • 2teaspoons lemon juice

  • 1/4 salt and freshly ground pepper to taste.

  1. Combine all together let sit in refg until ready to serve.

This is a nice change from the regular tuna salad. We had it for dinner with a veggie tray and sprouts. It was yummy.
