Cabbage and Potato Cakes

  • 1 cup cabbage, shredded, cooked

  • 1/2 cup plus 3 Tbs. potatoes, cooked, roughly mashed

  • 1 onion, finely chopped

  • 2 eggs, lightly beaten

  • 1/8 tsp. salt

  • 1/8 tsp. black pepper

  • 2-3/4 Tbs. oil or butter

  1. Combine all ingredients, except oil, in a bowl and mix well. Heat oil or butter in a heavy nonstick pan over medium high heat. Add spoonfuls of mixture in batches and cook 2 minutes each side, or until golden. Drain on paper towels. Serve hot.

I seen this and went out to get cabbage. I mad this for luch and it was so good. I may give it a try for a brunch when my girlfriends come over. It is really good…Debe
