Roasted Asparagus Parmesan

Ingredients
  • 2 ounds fresh asparagus spears

  • 2 Tablespoons extra-virgin olive oil

  • Kosher salt

  • Freshly ground pepper

  • 1/2 cup grated Parmesan cheese (2 oz.)

Directions
  1. Snap off and discard wood bases of asparagus spears. Scrape off scales, if desired. Place asparagus in a 15x10x1 inch baking pan. Drizzle with oil, tossing gently to coat. Spread out into a single layer. Sprinkle with kosher salt and pepper.

  2. Bake in a 440 degree oven for about 15 minutes or until asparagus is crisp-tender, tossing asparagus occasionally. Transfer to a serving platter; sprinkle with parmesan cheese.

This is such a simple and easy recipe that I am sure many people will love this one. Fresh asparagus is so good and adding the cheese will only bring out more of its great flavor.

oh yeah! i will be having me some of this! i'm the only one here that likes asparagus, but he'll just have to get over it!

I do this with all kinds of vegetables. Broccoli, eggplant, brussel sprouts, cauliflower. It is all yummy. Thanks for the reminder to do this.
