Pork Casserole with Tomatoes and Mushrooms

Ingredients
  • 2 Tablespoon olive oil

  • 4 centered-cut pork chops, each sliced against the grain into 3 pieaces

  • 2 onions, chopped

  • 2 tomatoes, chopped

  • 3/4 cups sliced white mushrooms

  • 3 cloves garlic, minced

  • 1/2 cup reduced=sodium chicken broth

  • salt and pepper to taste

  • 1/3 cup pitted black olives (optional)

Directions
  1. Heat the oil in a large. heavy skillet over medium heat until hot but not smokng. Add the pork pieces and cook 2 minutes on each side. Transfer to a plate and keep warm.

  2. Add the onions to the skillet and cook, stirring, for 3 minutes. Stir in the tomatoes, mushrooms and garlic and cook for 3 minutes. Add the chicken broth, salt and pepper, and bring to a boil. Reduce the heat, cover, and simmer, stirring occasionally, for 10 minutes.

  3. Return the pork yo the pan and cook, uncovered, for 2 mintes to heat through. Stir in the olives, if using and simmer for 3 minutes. Serve immediately.

This really sounds wonderful. I am always looking for a new recipe using pork. This one makes me want to use some of that low carb spagetti noodles on the side.
