2 Tablespoon olive oil
4 centered-cut pork chops, each sliced against the grain into 3 pieaces
2 onions, chopped
2 tomatoes, chopped
3/4 cups sliced white mushrooms
3 cloves garlic, minced
1/2 cup reduced=sodium chicken broth
salt and pepper to taste
1/3 cup pitted black olives (optional)
Heat the oil in a large. heavy skillet over medium heat until hot but not smokng. Add the pork pieces and cook 2 minutes on each side. Transfer to a plate and keep warm.
Add the onions to the skillet and cook, stirring, for 3 minutes. Stir in the tomatoes, mushrooms and garlic and cook for 3 minutes. Add the chicken broth, salt and pepper, and bring to a boil. Reduce the heat, cover, and simmer, stirring occasionally, for 10 minutes.
Return the pork yo the pan and cook, uncovered, for 2 mintes to heat through. Stir in the olives, if using and simmer for 3 minutes. Serve immediately.
