Lemony Catfish in Foil

Ingredients
  • 4 catfish fillets

  • 1/3 c. soft margarine

  • 1/3 c. lemon juice

  • 1 tsp pepper

  • 1/4 c. diced celery

  • 2 tbsp snipped parsley

  • 2 tsp salt

  • 1/2 c. diced carrots

  • 1/4 c. chopped green onion

  • 2 medium lemons, thinly sliced

Directions
  1. Preheat oven to 350 degrees.

  2. Place each fillet in separate foil pieces that are 4 inches longer than catfish.

  3. Melt the margarine in a medium skillet over medium heat.

  4. Combine margarine, lemon juice, pepper, celery, parsley, salt, carrots and onions and saute for 5 minutes.

  5. Divide the vegetables between fillets and top with lemon slices.

  6. Fold foil around fish.

  7. Bake for 30 minutes.
