Curry Chicken Salad

Ingredients
  • 1 1/2 cups cooked chicken breast

  • 1/2 cup nonfat plain yogurt

  • 1/4 cup light mayonnaise

  • 2 teaspoon curry powder

  • pinch of salt, sugar and pepper

  • 1/4 cup diced red apple

  • Salad greens

  • pita bread

  • Salad greens

Directions
  1. Combined cubed chicken breast with enough water to cover in a saucepan. Heat to a simmer over medium heat. Cook 4 to 5 minutes until chicken is cooked through. Drained and chop slightly.

  2. In a large bowl mix yogurt, mayonnaise, curry, salt, sugar and pepper until well combined. Add chicken and apples; mix together. Cover and refridgerate at least 1 hour. Serve with salad greens and pita

Just wanted you to know that I tried this today. I had it for dinner. It is awesome. I hope some other people try it.

This recipe contains all my favorite things. I have everything right here to make this and plan to do so for lunch this week. It will taste just right with the pita bread.
