Swiss Chard Scillian Style

Ingredients
  • 1 large bunch Swiss chard(1 1/4 lbs) rinsed well, tough stem ends trimmed

  • 1 Tablespoon olive oil

  • 1 small onion, chopped

  • 1/4 cup golden raisins

  • Salt

  • 2 Tablespoons pine nuts(pignoli), toasted

Directions
  1. Cut center ribs and stems from Swiss chard leaves. Cut ribs and stems into 1/2" pieces; set aside. Cut leaves into 2" pieces; transfer to colander to drain well.

  2. In a 7-to8-quart Dutch oven, heat oil on medium heat until hot. Add onion and chard ribs and stems, and cook 7 to 9 minutes or until tender, stirring occasionally. Add drained chard leaves, golden raisins, and 1/4 teaspoon salt; cover and cook 2 to 3 minutes or until leaves are tender. Remove dutch oven from heat; stir in pine nuts.

I am always looking for a new side dish. Actually if I added some cooked sliced veal during the last 10 minutes, this could be a main dish. Sounds wonderful!
