Surf 'n' Turf Skewers

Ingredients
  • 2 tablespoons chopped fresh basil

  • 2 tablespoons olive oil, divides

  • 1 package (4oz) sliced prociutto

  • 16 large shrimp, peeled and deveined, with tails on ( about 1 pound)

  • 1 red and/or yellow pepper, seeded and sliced

Directions
  1. Heat broiler. In a bowl, combine basil and 1 tablespoon oil. Cut each prociutto slice in half lengthwise; wrap one pieace around each shrimp.

  2. Thread shrimp onto sixteen 4" skewers. Brush with oil-basil mixture. Place shrimp on broiler pan. Broil 3 minutes, or until shrimp are pink, turning once.

  3. In a skillet over medium-high heat, cook peppers in remaining olive oil 3 minutes. Season with salt and pepper, if desired. Arrange peppers and skewers on platter.

  4. Serves 16

i am sick with envy! i can't eat shrimp, drives me batto 'cause i use to love eatin' 'em. i get sick now everytime i try. just one makes me sick!

Lovely LOW CARB idea for dinner!! I like the idea of something easy and quick that also will impress people you might serve this to. It serves up like you took all day to fix it.
