2 tablespoons chopped fresh basil
2 tablespoons olive oil, divides
1 package (4oz) sliced prociutto
16 large shrimp, peeled and deveined, with tails on ( about 1 pound)
1 red and/or yellow pepper, seeded and sliced
Heat broiler. In a bowl, combine basil and 1 tablespoon oil. Cut each prociutto slice in half lengthwise; wrap one pieace around each shrimp.
Thread shrimp onto sixteen 4" skewers. Brush with oil-basil mixture. Place shrimp on broiler pan. Broil 3 minutes, or until shrimp are pink, turning once.
In a skillet over medium-high heat, cook peppers in remaining olive oil 3 minutes. Season with salt and pepper, if desired. Arrange peppers and skewers on platter.
