Sauteed Cucumbers

Ingredients
  • 4 large cucumbers (about 8 ounces each)

  • 2 tablespoons unsalted butter

  • 2 teaspoons chopped fresh mint

  • salt and pepper

Directions
  1. Bring a large pot of salted water to a boil. Peel cucmbers, halve lengthwise and scoop out the seeds. Cut each lengthwise into 3 pieces. Drop into boiling water, bring back to boil and cook for 2 minutes. Drain.

  2. Melt butter in a large skillet over medium high heat. Add blanched cucumbers and stie or toss until tender and warmed through, 2-3 minutes. (Do not overcook, as this makes cucumbers bitter.0

  3. Stir in mint, season with salt and pepper and serve immediately

What a great idea for a side dish. To tell the truth, I have never had cucumbers done this way and I am looking forward to trying it. It seems so quick and easy to fix and nicely low carb!
