Parmesan Chicken Fingers

  • 1 cooking spray

  • 1/2 cup Crackers, soda, crushed , about 16 crackers

  • 1/3 cup grated parmesan cheese

  • 1/2 tsp ground basil leaves

  • 1/2 tsp dried marjoram

  • 1/2 tsp paprika

  • 1/2 tsp salt , optional

  • 1/4 cup black pepper

  • 4 boneless skinless chicken breasts

  • 1 eggs

  • 2 tbsp margarine , or butter

  • 1 medium garlic cloves , minced

  1. Preheat oven to 400 degrees F. Coat a baking sheet with nonstick cooking spray and set aside.

  2. Mix the soda cracker crumbs, Parmesan cheese, basil, marjoram, paprika, salt (optional), and pepper in a food processor or blender and process to make fine crumbs. Place in a shallow bowl.

  3. Cut each chicken breast into 4 strips.

  4. Beat egg in a small shallow bowl.

  5. Dip chicken strips first in the egg, then in the crumb mixture, turning to coat evenly.

  6. In a small microwave-safe bowl, microwave the butter and garlic on High for 45 seconds or until melted.

  7. Brush butter mixture onto chicken strips.

  8. Place chicken on baking sheet and bake until no longer pink in the middle, about 15 minutes.
